It's a sweet potato pie in a whole wheat crust. I have been frantically trying to find a good pie crust recipe (or maybe just acquiring enough practice). I think this one will taste good but it was a real pain to get into the dish. The sweet potatoes are from my farm share and oh are they tasty. I can't wait for it to come out of the oven and cool down so I can try it.
I leave for New York tomorrow so now I have to spend some time cleaning up the apartment and packing my suitcase. These are chores I only like to partake in when I have grueling homework staring me in the face, which, thank g-d, I dont have at the moment. So I have to muster the desire to put my computer down and get off the couch in some other way I suppose. I would much rather just pick up my knitting and continue to gaze out the wind to the forest in my backyard, all covered in the white of our first snow.
